Ingredients
- 200 grams beef tenderloin
- 2 pieces egg yolk
- 1 piece shallot
- 1 tablespoon capers
- 1 teaspoon dijon mustard
- 1 teaspoon worcestershire sauce
- 1 tablespoon fresh parsley
- 1 teaspoon lemon juice
- to taste salt
- to taste black pepper
- 1 tablespoon olive oil
Cooking instructions
- Prepare the Beef — Finely chop the beef tenderloin into very small pieces using a sharp knife. Keep it cold to maintain freshness.
- Chop Aromatics and Parsley — Finely mince the shallot and fresh parsley. Rinse and chop the capers roughly.
- Mix Ingredients — In a bowl, combine chopped beef, shallot, capers, parsley, Dijon mustard, Worcestershire sauce, lemon juice, and olive oil. Mix gently until well integrated.
- Season — Add salt and freshly ground black pepper to taste. Mix again carefully.
- Plate and Serve — Divide the tartare onto serving plates. Make a small well on top and place one raw egg yolk on each portion. Serve immediately with toasted bread or crackers.
