Ingredients
- 2 slices whole grain bread slices
- 1 can canned sardines in olive oil
- 6 pieces cherry tomatoes
- 1 tbsp olive oil
- 1 clove garlic clove
- 4 pieces fresh basil leaves
- 0.5 tbsp lemon juice
- to taste black pepper
- to taste sea salt
Cooking instructions
- Prepare Ingredients — Wash and halve the cherry tomatoes. Peel and finely chop the garlic clove. Drain sardines while reserving a little of the olive oil.
- Toast the Bread — Toast the whole grain bread slices until golden and crisp to your liking.
- Sauté Tomatoes and Garlic — In a small pan, heat 1 tablespoon of olive oil over medium heat. Add chopped garlic and sauté for 30 seconds until fragrant. Add cherry tomato halves, salt, and pepper, and cook for 3-4 minutes until tomatoes soften.
- Prepare Sardines — Gently flake sardines with a fork into bite-size pieces, mixing them with a splash of lemon juice and reserved oil for flavor.
- Assemble Toast — Place toasted bread on plates. Evenly spread sardines on each slice, then top with sautéed tomatoes and garlic.
- Garnish and Serve — Garnish with fresh basil leaves and an extra grind of black pepper if desired. Serve immediately for a nutritious breakfast.
