Ingredients
- 8 slices bacon
- 4 large eggs
- 1 loaf baguette
- 2 tbsp olive oil
- 1 tbsp fresh chives
- 1 tsp black pepper
- 0.5 tsp salt
Cooking instructions
- Prepare the baguette slices — Preheat oven to 375°F (190°C). Slice the baguette into 12 thin slices (~0.5 inch thick). Brush both sides lightly with olive oil and place on a baking sheet.
- Toast the crostini — Bake the bread slices in the oven for 8-10 minutes until crisp and golden, flipping halfway through. Remove and set aside.
- Cook the bacon — While bread is toasting, fry bacon slices in a skillet over medium heat until crispy. Drain excess fat on paper towels and cut each slice into thirds.
- Soft boil the eggs — Bring a pot of water to a boil. Gently add eggs and cook for 6 minutes. Immediately transfer to ice water to stop cooking. Peel carefully and slice each egg into quarters.
- Assemble the crostini — Arrange toasted baguette slices on a platter. Top each slice with a piece of bacon and a quarter of the soft-boiled egg. Sprinkle with salt, freshly ground black pepper, and chopped fresh chives.
- Serve immediately — Serve the crostini warm or at room temperature as a savory appetizer perfect for parties or casual gatherings.
