Ukrainian Borscht

Traditional Ukrainian beetroot soup enriched with beef and a balanced combination of vegetables including cabbage, potato, carrot, and a distinctive touch of bell pepper and tomato paste. Ingredients

  • 180 g beef
  • 160 g beetroot
  • 120 g cabbage
  • 120 g potato
  • 70 g carrot
  • 60 g onion
  • 25 g tomato paste
  • 2 cloves garlic
  • 30 g sour cream
  • to taste salt
  • to taste black pepper
  • 100 g pepper

Cooking instructions

  1. Prepare the ingredients — Peel and dice the beetroot, potato, carrot, and onion. Chop the cabbage and bell pepper into bite-sized pieces. Mince the garlic cloves.
  2. Cook the beef broth — In a large pot, bring water to a boil and add the beef pieces. Simmer for about 40 minutes until the beef is tender, skimming the surface to remove any impurities.
  3. Add vegetables — Add diced beetroot, potato, carrot, onion, and bell pepper to the pot. Continue to simmer for 20 minutes until the vegetables soften.
  4. Flavor the soup — Stir in the tomato paste, minced garlic, salt, black pepper, and freshly ground pepper to taste. Simmer for another 10 minutes to meld the flavors together.
  5. Add cabbage last — Add the chopped cabbage and cook for an additional 5 minutes until tender but still slightly crisp.
  6. Serve — Ladle the borscht into bowls and top each serving with a spoonful of sour cream. Optionally, garnish with fresh herbs if desired.
