Ingredients
- 250 grams smoked sausage
- 200 grams fresh mushrooms
- 1 piece onion
- 2 pieces garlic cloves
- 2 tablespoons vegetable oil
- 2 teaspoons paprika powder
- 1 teaspoon caraway seeds
- 1 piece hot chili pepper
- 200 grams cabbage
- 300 grams potatoes
- 1 liter beef or vegetable broth
- 3 tablespoons vinegar
Cooking instructions
- Prepare ingredients — Slice the smoked sausage, chop the onion and garlic finely, clean and slice mushrooms, shred the cabbage, peel and cube potatoes, and finely chop the hot chili pepper.
- Sauté aromatics and spices — Heat vegetable oil in a large pot over medium heat. Add onion and garlic, sauté until translucent. Stir in paprika powder, caraway seeds, and chopped chili pepper, cook briefly to release aroma.
- Add sausage and mushrooms — Add sliced smoked sausage and mushrooms to the pot. Cook for 5 minutes, stirring occasionally.
- Simmer vegetables — Add chopped cabbage, potatoes, and pour in the broth. Bring to a boil, then reduce heat and simmer for 25 minutes until potatoes and cabbage are tender.
- Season with vinegar and adjust taste — Stir in vinegar for the characteristic sour flavor. Taste and adjust seasoning with salt or more vinegar if desired. Let the soup rest covered for 5 minutes off heat before serving.
