Ingredients
- 600 grams hake fillets
- 3 medium tomato
- 4 pieces garlic cloves
- 1 piece red bell pepper
- 3 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons fresh parsley
Cooking instructions
- Prepare Vegetables — Preheat the oven to 200°C (400°F). Cut the tomatoes into halves, peel and halve garlic cloves, and slice the red bell pepper into strips.
- Roast Vegetables — Place tomatoes, garlic, and pepper on a baking tray. Drizzle with 2 tablespoons olive oil, sprinkle with salt and black pepper, and roast for 20 minutes until soft and lightly caramelized.
- Prepare Hake Fillets — Lightly oil a baking dish with 1 tablespoon olive oil. Season hake fillets with salt and black pepper on both sides.
- Layer Ingredients — Arrange the roasted vegetables evenly in the baking dish, then place the hake fillets on top.
- Bake the Hake — Bake everything together for 15 minutes until the hake is cooked through and flakes easily with a fork.
