Ingredients
- 2 pieces sole fillets
- 3 tablespoons all-purpose flour
- 0.5 teaspoons salt
- 0.25 teaspoons black pepper
- 3 tablespoons unsalted butter
- 1 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 pieces garlic cloves, minced
- 1 tablespoons fresh parsley, chopped
Cooking instructions
- Prepare the Sole — Pat the sole fillets dry with paper towels. In a shallow dish, mix the flour with salt and black pepper. Lightly dredge each sole fillet in the seasoned flour, shaking off excess.
- Heat the Pan — Heat the olive oil and 1 tablespoon of butter in a large non-stick skillet over medium-high heat until butter is melted and starts to foam.
- Pan-Sear the Fish — Place the sole fillets in the skillet and cook for 2-3 minutes on each side until golden and just cooked through. Remove fillets to a warm plate and keep warm.
- Make Lemon Butter Sauce — Reduce heat to medium. Add the remaining 2 tablespoons butter and minced garlic to the skillet. Stir and cook for 30 seconds until fragrant. Add lemon juice and stir to combine, cooking for another minute to meld flavors.
- Serve — Pour the lemon butter sauce over the sole fillets. Garnish with chopped fresh parsley and serve immediately with your choice of sides.
