Ingredients

  • 2 pieces sole fillets
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves
  • 2 tablespoons fresh parsley
  • 1 tablespoons lemon juice
  • to taste salt
  • to taste black pepper

Cooking instructions

  1. Prepare the Ingredients — Rinse the sole fillets and pat dry with paper towels. Finely chop the garlic cloves and fresh parsley.
  2. Heat the Pan — Place a non-stick skillet over medium heat and add olive oil. Allow it to heat until shimmering but not smoking.
  3. Season the Sole — Season both sides of the sole fillets with salt and black pepper to taste.
  4. Cook the Sole — Place the fillets in the hot pan and cook for 3-4 minutes on one side until golden brown. Carefully flip and cook the other side for another 2-3 minutes until opaque and cooked through.
  5. Add Garlic and Herbs — In the last minute of cooking, sprinkle chopped garlic and parsley over the fillets, allowing the flavors to infuse gently without burning the garlic.
  6. Finish with Lemon Juice — Remove the pan from heat and drizzle lemon juice over the sole fillets.
  7. Serve — Transfer the fillets to plates and spoon any pan juices with garlic and herbs over the top. Serve immediately with your choice of side.
