Ingredients
- 500 grams chicken breast
- 1 medium onion
- 2 medium carrot
- 15 grams cilantro
- 15 grams mint
- 15 grams dill
- 3 tablespoons olive oil
- 2 cloves garlic
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 0.5 teaspoon black pepper

Cooking instructions
- Prepare the herb marinade — In a bowl, finely chop cilantro, mint, and dill. Add minced garlic, olive oil, lemon juice, salt, and black pepper. Mix well.
- Marinate the chicken — Cut chicken breast into evenly sized cubes. Toss chicken pieces in the herb marinade. Cover and refrigerate for at least 30 minutes.
- Prepare the vegetables — Peel and thinly slice carrots and onion into strips or rings.
- Thread chicken onto skewers — Soak wooden skewers in water for 10 minutes. Thread marinated chicken cubes onto skewers evenly.
- Grill the chicken skewers — Heat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 4-5 minutes per side until cooked through and nicely charred.
- Sauté carrots and onions — While grilling chicken, heat a tablespoon of olive oil in a skillet. Add sliced carrots and onions, sauté until tender and slightly caramelized, about 6-7 minutes.
- Serve — Arrange grilled chicken skewers on plates with sautéed carrots and onions. Spoon remaining fresh herb mixture as salsa over the top or on the side.
