Duck and Peach Stir-Fry

Ingredients
- 400 g duck breast
- 2 pieces ripe peaches
- 30 ml soy sauce
- 15 ml honey
- 10 g fresh ginger
- 2 pieces garlic cloves
- 15 ml vegetable oil
- 2 pieces spring onions
- to taste black pepper
- to taste salt
Cooking instructions
- Prepare Ingredients — Slice the duck breast into thin strips. Pit peaches and cut into wedges. Peel and mince garlic and ginger. Slice spring onions.
- Marinate Duck — In a bowl, mix duck strips with soy sauce and black pepper. Set aside for 10 minutes.
- Cook Duck — Heat vegetable oil in a large skillet or wok over medium-high heat. Add duck strips and stir-fry until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
- Sauté Aromatics and Peaches — In the same pan, add garlic, ginger, and white parts of spring onions. Stir-fry for 1 minute until fragrant. Add peach wedges and cook for 2-3 minutes until peaches are slightly softened.
- Combine and Glaze — Return cooked duck to the pan with peaches. Add honey and stir well to combine and glaze the ingredients. Cook for another 2 minutes.
- Finish and Serve — Add spring onion greens, adjust seasoning with salt and pepper as needed. Stir once more and serve hot with steamed rice or noodles.
