Ingredients
- 400 grams duck breast
- 2 pieces peach
- 2 tablespoons olive oil
- 1 piece onion
- 3 pieces garlic cloves
- 1 piece carrot
- 1 piece celery stalk
- 500 milliliters chicken broth
- 1 tablespoon tomato paste
- 2 teaspoons fresh thyme

Cooking instructions
- Prepare ingredients — Dice the onion, garlic, carrot, and celery. Cut the peaches into chunks, discarding the pits. Slice the duck breast into bite-sized pieces.
- Brown the duck — Heat olive oil in a heavy pot over medium-high heat. Add duck pieces and brown them on all sides for about 5 minutes. Remove duck and set aside.
- Sauté vegetables — In the same pot, add onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
- Add broth and seasonings — Stir in tomato paste and fresh thyme. Return duck to the pot. Pour in chicken broth, bring to a simmer.
- Simmer stew — Add peach chunks, cover the pot, and simmer on low heat for 25 minutes until duck is tender and flavors meld.
- Season and serve — Taste the stew and season with salt and black pepper as needed. Serve hot, optionally with crusty bread or rice.
