Ingredients

  • 400 grams chicken breast
  • 150 grams potato
  • 1 piece onion
  • 3 cloves garlic
  • 100 grams carrot
  • 100 grams cucumber
  • 150 grams tomato
  • 2 pieces eggs
  • 30 grams butter
  • 200 grams rice
  • 20 milliliters vegetable oil
  • to taste salt

Cooking instructions

  1. Prepare Ingredients — Dice the chicken breast, potato, carrot, onion, and tomato. Mince the garlic. Peel and slice the cucumber into small pieces. Rinse the rice under cold water until clear.
  2. Cook the Rice — In a pot, bring water to boil, add a pinch of salt and rice. Cook rice until almost done and drain excess water if any.
  3. Cook Vegetables and Chicken — Heat vegetable oil and half the butter in a large pan. Sauté onions and garlic until translucent. Add chicken pieces and cook until lightly browned. Add diced potatoes and carrots, cook for 5 minutes.
  4. Combine and Simmer — Add cooked rice and diced tomato to the pan with chicken and vegetables. Mix well, season with salt to taste. Cover and simmer on low heat for another 15 minutes until all is tender and flavors blend.
  5. Prepare Boiled Eggs and Salad — Boil eggs for 8 minutes until hard-boiled. Peel and cut into halves. Mix cucumber and remaining tomato with a pinch of salt for a fresh salad, drizzle with melted butter.
  6. Serve — Plate the pilaf, garnish with boiled eggs and serve the fresh cucumber tomato salad on the side.
