Ingredients

  • 300 grams beef sirloin
  • 200 grams cooked kidney beans
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 10 grams fresh cilantro
  • 3 tablespoons olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon lime juice
  • 1 clove garlic clove

Cooking instructions

  1. Prepare the beef — Season the beef sirloin with salt and pepper. Grill or pan-sear the beef over medium-high heat for about 4 minutes per side until medium-rare. Let it rest for 5 minutes, then slice thinly.
  2. Prepare the vegetables — While the beef cooks, dice the red bell pepper and thinly slice the red onion. Chop the fresh cilantro finely.
  3. Make the dressing — In a small bowl, whisk together olive oil, orange juice, lime juice, minced garlic, salt, and black pepper until emulsified.
  4. Assemble the salad — In a large bowl, combine the cooked kidney beans, bell pepper, red onion, and cilantro. Add the sliced beef.
  5. Toss and serve — Pour the dressing over the salad and gently toss to combine all ingredients evenly. Serve the salad chilled or at room temperature.
